Prep for Success recipies: Macadamia nut muffins
- 1 cup (1 stick) unsalted butter, softened
- 1 cup firmly packed brown sugar
- 3 eggs
- ¾ tsp Almond extract
- ½ tsp Vanilla extract
- 1 cup plus
- 2 tbsp. bread flour
- 1- ¼ tsp Baking powder
- ½ tsp salt
- ¼ cup whipping cream
- ½ cup whole macadamia nuts
- 1 cup coarsely chopped macadamia nuts (careful not to chop too small or they disappear)
- Preheat oven to 350°F.
- With an electric beater, mix together the butter, brown sugar, eggs, vanilla and almond extracts, flour, baking powder, salt and whipping cream.
- Fold nuts into mixture.
- Pour into cupcake liners or greased muffin tins. (One nut can be placed on top of each muffin for decoration before baking.)
- Bake in preheated oven for 25 minutes or until a toothpick inserted the centre comes out clean.
